This choice is also technical: thanks to its firm and stable structure, Greek yogurt withstands pasteurization perfectly. Unlike more liquid yogurts, it does not separate under heat, maintaining its creaminess. The result? A sauce that remains smooth and creamy, even after pasteurization.
🔸 A garam masala from Terre Exotique for authentic flavors
Garam masala is a spice blend emblematic of Indian cuisine, valued for its balance between intensity and finesse. Composed of pepper, fennel, anise, cinnamon, and clove, it brings the recipe its characteristic aromatic depth. Pepper subtly enhances the flavors, while anise and fennel add a gentle sweetness. Cinnamon brings roundness, balanced by clove, which adds a woody and spicy note. A precise blend that structures the dish and reinforces its authenticity.
