Our vegetable curry, inspired by Thai cuisine, combines a selection of vegetables in a coconut milk sauce enriched with Madras curry, offering an experience that’s both exotic and comforting.

🔸 A fusion in perfect balance
While Thai influences are reflected in the use of coconut milk, ginger, and curry, we chose to include sweet potatoes and leeks—ingredients not commonly found in Thai cooking. Why? Their natural sweetness and soft texture add a subtle roundness that balances the curry’s heat and highlights the dish’s aromatic richness. Paired with coconut cream, they create a smooth base that harmonizes all the flavors.

🔸 A mild curry with refined spices
We selected the mild Madras curry from Terre Exotique, an exceptional French supplier appreciated by top chefs. This precisely balanced spice blend combines the warmth of turmeric, the freshness of coriander, the depth of cumin, and the vibrancy of pepper—enhanced with more complex notes of fennel, mustard, clove, and especially cinnamon and cardamom. These last two are the hallmark of this curry: cinnamon brings a subtle, enchanting sweetness, while cardamom adds an elegant, slightly citrusy note. Together, they balance the flavors and elevate the dish without overpowering it. This delicate alchemy is why we love using Terre Exotique’s curry in our kitchen.
