Our tomato sauce meatballs follow a family culinary tradition, where simplicity and balanced flavors come together naturally.
🔸 Quality meat from a local butcher
The choice of a pork-beef blend allows us to combine the tenderness of pork with the aromatic depth of beef. Pork, with its higher intramuscular fat content and shorter fibers, brings a softer texture and prevents the meatballs from drying out. Beef, on the other hand, provides deeper flavor and a firmer structure, which pairs well with tomato sauce. The preparation is done by Walravens butcher shop, a Brussels institution for over 110 years, known for its strict meat selection and traceability standards.
🔸 A premium tomato sauce, straight from Italy
The sauce plays a central role in balancing the dish. We use a premium passata from the Italian house Menù, known for the quality of their artisanal preserves. As part of a rigorous selection process, we visited their factory in Italy to meet Filippo Giarolo and observe their mastery of the transformation process. The tomatoes are harvested at full ripeness and processed quickly to preserve their natural sweetness and ensure controlled acidity—guaranteeing a balanced and authentic flavor base.
🔸 A touch of herbs that makes a difference
We selected a blend of savory, oregano, rosemary and thyme for its balance of freshness, intensity, and aromatic complexity. Savory, with its lightly peppery and woody notes, plays a key role in enhancing the meatball flavor without overwhelming it. It adds a warm and rustic tone, typical of slow-cooked dishes, while harmonizing the tomato’s acidity. This careful herb selection gives our recipe an authentic signature and well-rounded depth of flavor—true to the traditional spirit.
